Salted Spelt-Pie (Makes 4 servings)

Boil spelt (see cooking suggestions above). Drain and strain. Add salt, pepper, nutmeg, beaten eggs, parsley, ricotta cheese and grated parmesan. Stir with care. Butter a pie-tin, dust with some breadcrumbs and pour the dough.
Bake at 180°for about 30-40 minutes.
