- 500 g lentils
- 1 celery rib with leaves
- some parsley
- 1 carrot
- 1 onion
- 1 potato
- 1 patata
- 1 tablespoon extra virgin olive oil
- Salt, pepper.
Directions:
Prepare some vegetable soup boiling celery, parsley carrot, onion and potato for about 20 minutes. Add lentils and boil for other 15-20 minutes. Strain the vegetables and continue to cook until it has the right consistence. Serve hot over toasted slices of bread.
