Lentil-Balls (Makes 4 servings)

Boil lentils (see cooking suggestions above). Drain and strain. Soak stale bread in milk. Beat up eggs and salt, parsley, some pepper and chopped garlic. Add lentils purée and bread and mix. The mixture should have the consistence to form balls; if it is necessary, add some breadcrumbs. Form some balls, place the balls over a oily, non-sticking baking pan. Bake for 15 minutes in preheated oven at 160°.
