Spelt and Pesto Soup (Makes 4 servings)

Dice all vegetables and boil with guanciale or pigskin in a cooking pot full of salted water. Cook for about 1 hour and a half. Mash some potatoes and beans to make soup thicker.
Chop all the ingredients for pesto with care.
When vegetables are done, add spelt and cook for about 30 minutes.
Then add pesto.
Serve hot.
