Spelt Cake (Makes 6 servings)

Boil milk with cinnamon and cloves. Remove spices and add rinsed spelt. Add vanillin and sugar. Cook over low heat stirring every now and then. Spelt must absorb all milk. Beat yolks, flour and lemon peel. Add ricotta cheese, raisins with its liquid, baking powder and spelt. Whip the whites with a pinch of salt and gently add to mixture. Butter a pie-tin and pour the dough.
Bake for 45 minutes in preheated oven at 180.
