Cotechino with Lentils (Makes 4 servings)

Rinse cotechino, prick all over the surface and wrap with a cloth. Put cotechino in a cooking pot and add cold water. Boil for about 2 hours.
Boil lentils with some onion, celery and laurel and then add salt. In a non-sticking pan sauté some onion, celery and then add some cotechino or lentil broth. Place sliced cotechino in the pan. Reduce heat, cook for some minutes and serve.
